Ingredients
2 cups corn kernels
¼ cup mayonnaise
¼ cup crumbled cotija cheese
2 tbsp chopped cilantro
2 tbsp finely chopped red onion
1 tbsp lime juice
½ tsp chili powder

Directions
Cook the mac & cheese according to package directions.
Meanwhile, mix together the remaining ingredients until well combined and the corn is coated.
Spoon the corn on top of the mac & cheese and enjoy!
Mac & Cheese Pepperoni pizza

2 pitas
¼ pizza sauce or marinara sauce
1 ½ - 2 cups shredded mozzarella cheese

Pepperoni slices
Directions
Preheat the oven to 400 degrees Fahrenheit.
Prepare the mac & cheese according to package directions.
Place the pitas on a baking sheet and spread some pizza sauce over the pitas. Top with the shredded cheese, then the cooked mac & cheese. Top with pepperoni slices.
Transfer to the oven and bake for 8 - 10 minutes or until the mozzarella is melted and the pita is crisp underneath.
Slice, serve, and enjoy!

BBQ Mac & cheese naan pizza

Ingredients (makes 1)
1 naan bread
2 - 4 tbsp barbecue sauce
1 cup shredded mozzarella cheese
Thinly sliced red onion
1 container 8 Myles Homestyle Mac & Cheese
Chopped cilantro
Ranch, to drizzle
Directions
Preheat oven to 400 degrees Fahrenheit.
Place the naan on a baking sheet and spread the desired amount of barbecue sauce evenly over top. Top with the shredded cheese, then some thinly sliced red onion.
Bake for 5 - 7 minutes or until the cheese is melted and the naan is crisp on the bottom.
Meanwhile, cook the mac and cheese according to package directions. Top the naan with the mac and cheese. Sprinkle with chopped cilantro and drizzle with ranch.
Slice and serve immediately and enjoy!
Fried Mac & Cheese balls

Ingredients
1 box of Myles Comfort Foods Philly Steak & Cheese
1/2 cup all purpose flour
1 egg, beaten
1 cup panko bread crumbs
Pinch of salt and pepper
Neutral oil, to fry
Ranch, to serve
Directions
Cook the mac & cheese according to package directions. Stir and let chill to room temperature.
Line a baking sheet with parchment paper and use a cookie scoop or large spoon to scoop balls of the mac and cheese on the sheet. Transfer to the freezer and chill for about an hour.
Heat a large deep skillet over medium heat and add enough oil to cover an inch of the bottom of the pan. Allow to heat to about 350 degrees Fahrenheit, temping with a thermometer.
While the oil is heating, set up a dredging station: Place the flour in a shallow dish or bowl. Beat the egg in a bowl. Mix the breadcrumbs with a pinch of salt and pepper in a bowl.
Roll a mac and cheese ball in the flour, then in the egg. Let the excess drip off, then roll in the breadcrumbs. Set aside, then repeat with the remaining mac and cheese balls.
Once the oil is heated, gently place a dredged mac and cheese ball in the hot oil. Fry for 2 - 3 minutes per side, until golden brown. Rotate and fry each side until golden brown. Remove and set on a paper towel-lined plate. You can fry 4 - 5 balls at a time.
Let cool just slightly before serving with a dipping sauce such as ranch!
Buffalo chicken mac & cheese puff pastry cups

Ingredients
1 sheet puff pastry, thawed
1 package of Myles Comfort Foods Buffalo Style Chicken Mac & Cheese
Chopped green onion
Directions:
Preheat oven to 400 F. Cook the mac & cheese according to the package instructions, then let cool to room temperature.
Roll the puff pastry sheet our and cut into sixths. Arrange into a six cup muffin tin. Scoop about 2 spoonfuls of the mac & cheese into the centre of each puff pastry cup.
Transfer to the oven and bake for about 15 - 20 minutes or until the puff pastry has puffed and is golden brown on the edges.
Serve hot with hopped green onion to top (and ranch to dip!)
white wine sangria

Ingredients
1 bottle sweet moscato white wine
1 cup tequila
1 cup orange juice
2 cups mixed berries
2 limes juiced
Sparkling water, to serve
Directions:
Mix together all ingredients (except sparkling water) into a large pitcher.
Pour into serving glasses with ice, top with desired amount of sparkling water & enjoy!
Foolproof caesar dressing

Ingredients
½ cup mayo
¼ cup grated parm
1 tbsp lemon juice
1 tsp dijon mustard
1 tsp worcestershire sauce
1 large clove garlic, minced or grated
½ tsp ground black pepper
Pinch salt
Water, to thin as needed
Directions
Add all ingredients except the water to a blender and blend until smooth, about 30 seconds. Add a splash or more of water if needed to thin to a pourable consistency.
Toss with salad greens such as chopped kale or romaine lettuce.
